Blueberry Biscuits

My Take

This recipe is inspired by the infamous "bo'berry biscuit" from the Southern fast food chain, Bo'jangles. I've been missing a taste of home for quite some time now and this is the closest I can get to that sweet savory treat.

Ingredients

  • 1 stick cold butter

  • 2 cups all-purpose flour

  • 1 Tablespoon baking powder

  • 1 Tablespoon honey

  • 1 teaspoon salt

  • 3/4 cup of milk

  • 1 cup whole blueberries

Preparation

  1. First, you're going to want to stick that butter in the freezer. I know it sounds a little weird, but using cold butter will result in super light, super flaky biscuits.

  2. Preheat oven to 425° F and spray a baking pan with a light coat of nonstick spray.

  3. Combine dry ingredients (flour, baking powder, and salt) in a large bowl.

  4. Add honey, and mix well.

  5. Next, grab that stick of butter from the freezer and cut off 6 Tablespoons. There are different methods you can try to break up the cold butter into the mixture, but I find using a microplane or cheese grater to be the best. I'll take the whole 6 Tbsps and grate the frozen stick right over the bowl of mixed ingredients.

  6. Combine the butter with fork or fingers. Add the milk and mix until forming a nice and shaggy dough.

  7. Lightly dust a flat surface with flour and flop the dough on top to prepare for shaping.

  8. Carefully place the blueberries on the dough and fold in half to create layers. It's okay to roughen up the berries a bit; the juice will add more flavor. Do this 6-8 times.

  9. Cut out your biscuits with a circle-shaped biscuit cutter or jar (or whatever you have that will work), and place each biscuit on the baking sheet. This should produce about 6 biscuits.

  10. Pop those into the oven and set a timer for 12 minutes.

  11. While the goodies are baking, it's time to make the glaze. Take the rest of that butter stick and microwave with about a Tbsp of honey in a small bowl.

  12. *Optional: When the timer goes off, remove the biscuits from the oven and glaze with following mixture (1 Tbsp each; powdered sugar, crushed berries, honey and remaining butter stick). You can use a brush for this or spoon it on top of each.

  13. Pop those babies BACK in the oven for a couple more minutes (probably 2-3) and they are donezo. Enjoy hot, or with sausage/egg/cheese on top (highly recommend).
